Go-To Meal

Do you have a go-to meal? 
Like one you make for company or if you are bringing someone a meal because you know it always turns out good? Well I do, so here it is. I've had this recipe for so long that I don't remember where I got it, and I made a couple changes along the way so I am just going to call it mine now (mwa-hahaha!). 
It makes a bunch too so its also great for potlucks. 


Baked Rigatoni
1 box of Rigatoni pasta

1 lb ground beef
1/2-1 onion, chopped (depending on how much you like)

2 jars of Prego Italian Sausage and Garlic sauce
(you can use any kind but i like this one because of the yummy bits of sausage already in there)
1 or 2 tbsp red wine
1 bag (2 cups) of shredded Italian blend cheese (Sargento or Kraft)
3/4 cup cottage cheese
3/4 cup sour cream
Fresh or dry basil for topping

1) Brown ground beef and onion until beef is browned, draining the fat
2) Add sauce (I usually use one and a half bottles because 2 seems to be overly saucy but hey if you like that go for all of it) and a glug or 2 of red wine, and let simmer on low for about 20 minutes
3) While this is going, boil the water for the pasta and cook it according to the package directions
4) Once pasta is drained, add in both the cottage cheese and sour cream and mix well together

And now for the assembling...
5) In a greased 9x13 baking dish, spread out half of the pasta mixture
6) Layer half of the meat sauce, and then half of the cheese
7) Next layer the other half of the pasta, then the other half of the cheese
8) Lastly sprinkle the basil all over the top to make it look nice and pretty.
9) Bake at 350 for 30 minutes and you're done!

This is what your pasta mixture should look like, this is the key to the creaminess!

Craft Central

I just wanted to share about one of my favorite websites for mom's, its called No Time for Flashcards
Its an amazing resource for crafts and lessons of practically any subject for the little ones. You can browse by age, by season, by subject, you name it! 
Many times she will feature a book that will go along with the craft which is a great reference tool also. 
And for a homeschool mom with a creative kid, I think this site will be even more helpful!

Neutral Territory

This is definitely a transition time, summer winding down and figuring out what our days will be like now. Trying to figure out my plan for home preschool and last week my bible study BSF started up again, which I am really excited about, we are studying the book of Genesis which I have never done in depth.

And what has fallen between the cracks but updating my blog. It is seriously 95 degrees outside right now in Southern California, I am inside right now with the air on, boo! I used to like to wear a lot more color, but lately being more on a budget, I like to buy stylish neutrals, that I love, and go with lots of different things. I found this scarf below that I am totally in love with!
Plus I am looking for a cute everyday shoe I can wear when it gets cold, that isn't an Ugg boot. I mean, I love my Uggs but I feel like a little kid when I wear them! They need to be reserved for emergency trips to the store and bonfires.
As for those 2 bags, yes they are the same, I just couldn't decide which color I liked better! (They are from Steve Madden where you can get 20% off until Oct. 19 with the code PSW2012)

Schooool

Isn't school kind of a weird word? Like when you just stare at it? "School", just look at it. Its like gibberish.
Anyway, this is how I get sidetracked sometimes and I am planning to homeschool??
This is when I stop and say, Lord, are you sure this is your calling for me?
Well I still think that it is.
A lot of friends were sending their kids off to school this week, and I started to panic a little. Because I really didn't have a plan in place. The good news is that Carys is only 4 and already knows most of the alphabet and is already starting to write some letters. 
So we are going to start our "homeschool preschool" next week. It won't be super formal, but I need to have at least a little structure or else nothing will get done. When she starts kindergarten I plan to be part of a charter school or some other organized group, so that I can get some help actually being organized!
Overall I am really thankful for this time, so I can figure out what her learning style is, be flexible, see what works and just enjoy her being a kid before her kindergarten starts next year.

Biblical Virtue of the Week: Love
Craft: something with Apples 
(see its already coming together...an apple is from the story, and it starts with A!)

Fall Blog Conference & Boutique

I'm excited to be attending the Fall Boutique and Mini Blog Conference hosted by Penelope Lane on September 29th, right down the road in Seal Beach! I had the pleasure of meeting Sarah (the gal behind Penelope Lane who also happens to be a really sweet mom of 3, blogger, and maker of adorable hair accessories) at Carys' swim lessons this summer. Happy Labor Day

Hope you all have a nice, relaxing day! 
I am happy because my husband has the day off and we are finally painting our bathroom. woohoo! Right now Carys is in a time out in the corner screaming in her chair, ahh to be a 4 year old...it can be rough. I am choosing to stay relaxed :).
