My friend Marcie always jokes that she remembers when I couldn't boil water. But now I cook all the time and I love it! Not saying I am good at it, but I love to try to recipes so why not share some of them that actually worked for us. These are husband approved! Recently I started making my menu for the week on Sunday so that I don't have to ever scramble for dinner during the week.

Chicken Pepper Pasta
This is my new favorite! Its so easy and really good. It only uses 2 chicken breasts but still makes enough to feed the family. (She says to use 3 lbs. chicken but I don't think you need to). Plus I think you could sub sausage for the chicken and it would be just as good. Found it on this awesome site Full Bellies, Happy Kids. I have a feeling there is a lot more goodness to be had from this blog. By the way, I like to use Whole Grain Spaghetti by Barilla, its really good for one of those "healthy" pastas.
Easy Crockpot Ribs
Um, hallelujah! The only work here is to broil them in the oven for a little bit after they cook all day. I served it with sweet potatoes and broccoli. Nice, colorful plate isn't it? By the way, for sweet potatoes I just dice them up and toss with olive oil, kosher salt and pepper, and then bake at 400 degrees for 20-30 minutes. I LOVE sweet potatoes.
