Dinner Time

My friend Marcie always jokes that she remembers when I couldn't boil water. But now I cook all the time and I love it! Not saying I am good at it, but I love to try to recipes so why not share some of them that actually worked for us. These are husband approved! Recently I started making my menu for the week on Sunday so that I don't have to ever scramble for dinner during the week.

(Click on the recipe titles to get to the actual recipe)

Chicken Pepper Pasta
This is my new favorite! Its so easy and really good. It only uses 2 chicken breasts but still makes enough to feed the family. (She says to use 3 lbs. chicken but I don't think you need to). Plus I think you could sub sausage for the chicken and it would be just as good. Found it on this awesome site Full Bellies, Happy Kids. I have a feeling there is a lot more goodness to be had from this blog. By the way, I like to use Whole Grain Spaghetti by Barilla, its really good for one of those "healthy" pastas.

Easy Crockpot Ribs
Um, hallelujah! The only work here is to broil them in the oven for a little bit after they cook all day. I served it with sweet potatoes and broccoli. Nice, colorful plate isn't it? By the way, for sweet potatoes I just dice them up and toss with olive oil, kosher salt and pepper, and then bake at 400 degrees for 20-30 minutes. I LOVE sweet potatoes.

Crockpot Korean Short Rib Tacos with Cucumber Slaw

Alright this one sounds complicated but its not. And a slaw sounds fancy but it is really just a cucumber diced up with a few ingredients mixed in. Short ribs are my friend. This is the only a picture I got, but I think it says it all.

Love and Oreos

Nathan and I celebrated our 5 year wedding anniversary last week. Its so close to Valentine's Day that we just combine the two...do people really still celebrate Valentine's Day? Well at least it is an excuse to make my man some cookies. I found a recipe using his favorite treat, Oreo's of course.

Ladies and gentlemen, I present, the Oreo Chocolate Chip cookie....

Soldiers....prepare for battle!
(By the way, I got a cookie scooper, which is absolutely fabulous and makes cookie making so much easier)

Check out that Oreo chunk up in there...Heaven.

Glorious! Get the milk.

What an amazing 5 years its been so far, the Lord has blessed us with a beautiful family and home and I couldn't ask for a better partner to share it all with!

Pinterest

So Pinterest is the new big thing in the blog/online world. Or maybe its the old big thing, I really don't know how long its been there. Anyway, its just a place to go and "pin" things you love, from fashion to home design to food to whatever. I've heard it called fantasy football for girls. Favorite pins from today:
